creating a delicious halloween!

Happiest of Halloweens everyone!

The lil’ gouls and I were busy this morning making pumpkin cookies.  They have been particularly excited about the day and had a wonderful evening.  Hope yours was just as ghoulishly wonderful!

today’s pumpkin cookie recipe:

1 cup pumpkin (canned or fresh)
3/4 cup raw turbinado sugar
1/2 cup of grandma’s applesauce
1 egg
2 cups whole wheat flour (we ground the berries in the blendtec)
2 tsp pumpkin pie spice (cinnamon, nutmeg, cloves, etc.)
1/2 tsp baking soda
1 tsp milk
1 tbs vanilla extract
2 cups chocolate chips
1/2 cup walnuts (we left them out today)

  1. Mix all ingredients (except chocolate chips and/or nuts) till combined.
  2. Add chocolate chips and/or nuts.
  3. Drop onto cookie sheets and bake at 350 for 10 -12 minutes.

Makes about 3 dozen
